Meet Josh and Tony from Tasmanian Oyster Company - Tasmania, Australia

The company we now know as the Tasmanian Oyster Company has roots that date back to 1979 and produce sustainable, organic, gold medal winning oysters.

A vertically integrated company, Tasmanian Oyster Co oversees every aspect of oyster farming. From the spawning of baby oysters (spat) to looking after them in the hatchery, then the nursery, to finally growing them out to maturity in the wild and unforgiving oceans around Tasmania. 

Now employing over 100 people across their organisation, 2022 saw them hit the milestone of over 1 million sales of dozen mature oysters as well as the acquisition of their first interstate hatchery in Coffin Bay, South Australia. 

We speak with Josh and Tony about the highs and lows of oyster farming, how the current Tasmanian Oyster Co structure came about, the surprising sustainability of the oyster as well as the "POMS" virus that threatened their business in recent years.
